Pineapple Turmeric dressing

I love to make my own dressings at home. After reading all the labels on the bottles of dressings at the store I can usually not find any dressings that don’t use odd ingredients and poor quality soybean and canola oils.

The benefit of making your own dressing is that you can control what goes into your dressings (and body!). Store bought dressings may not be made with the best quality oils and often contain extra sodium or sugar, various additives and preservatives.  With a home-made dressing you can control the quality of ingredients and best of all its preservative and additive free!

There are lots of nutrients in this dressing.

Pineapple is an excellent source of fiber, Vitamin C and the trace mineral manganese, which is an essential cofactor in a number of enzymes important in energy production and antioxidant defenses.

Pineapples also contain Bromelain. Bromelain is an enzyme that is known to break down proteins and may provide many other benefits. Read more here.

Ingredients:

1.5-2 cups pineapple

1/5 cup Bragg apple cider vinegar

1 table-spoon lime juie

A few squirts of raw honey (optional, usually the pineapple has plenty of sweetness!)

1/2 teaspoon ground roasted cumin

1/4 teaspoon turmeric or 1/4 inch fresh turmeric root (add more for your palate!)

1-2 table spoons fresh ginger root

1/2 cup oil ( for reduced fat option use 1/4 cup oil and add some water if dressing is too thick)

Salt and pepper to taste (pepper is important with turmeric as it may assist with bio-availability of the curcumin in turmeric)

Method:

Blend all the ingredients in your Vitamix or blender of choice.

Your dressing is ready! You can use it for all your salads or as a dip for your favorite vegetables!
